Fava Beans with Pecorino Cheese

I N G R E D I E N T S
Fresh Fava Beans - Unshelled 3-4 Pounds
Gallucci Extra Virgin Olive Oil 4 Tablespoons
Minced Fresh Parsley 1 Tablespoon
Pecorino Cheese 1 oz.
Salt To taste
Pepper To taste

1 Shell the fava beans from their pods.
2 Blanch in a pot of boiling water for 4-5 minutes.
3 Drain and place in a ice water bath. Remove the tough outer shell on the beans.
4 Prepare your plates by arranging a small nest of baby greens.
5 Arrange the fava on top of the greens- then drizzle with the olive oil.
6 Season with salt and pepper- and sprinkle on the chopped parsley.
7 Shave the Pecorino on top of the prepared beans and serve.
