Prosciutto with Apple Salad
( YIELD: 4-6 servings )

I N G R E D I E N T S
Prosciutto di Parma thinly sliced Half a pound
Granny Smith apple- peeled and cored 1
McIntosh apple- peeled and cored 1
Golden Delicious apple- peeled and cored 1
Poppy seeds 1 Tbs
Gallucci extra- virgin olive oil 3 Tbs
Red wine vinegar 1 Tbs
Radicchio di Treviso - leaves detached 1 head
Salt to taste
Pepper to taste
Parmigiano Reggiano for shaving

1 Place the prosciutto on a large platter.
2 Julienne all apples and place in a mixing bowl.
3 Add the poppy seeds- Gallucci olive oil- vinegar- radicchio- salt and pepper to taste and toss to coat.
4 Arrange the salad in the center of the plate and shave curls of Parmigiano Reggiano over the salad and ham.
5 Serve immediately.
