
Prosciutto with Apple Salad

| Prosciutto di Parma thinly sliced | Half a pound |
| Granny Smith apple- peeled and cored | 1 |
| McIntosh apple- peeled and cored | 1 |
| Golden Delicious apple- peeled and cored | 1 |
| Poppy seeds | 1 Tbs |
| Gallucci extra- virgin olive oil | 3 Tbs |
| Red wine vinegar | 1 Tbs |
| Radicchio di Treviso - leaves detached | 1 head |
| Salt | to taste |
| Pepper | to taste |
| Parmigiano Reggiano | for shaving |
| 1 | Place the prosciutto on a large platter. |
| 2 | Julienne all apples and place in a mixing bowl. |
| 3 | Add the poppy seeds- Gallucci olive oil- vinegar- radicchio- salt and pepper to taste and toss to coat. |
| 4 | Arrange the salad in the center of the plate and shave curls of Parmigiano Reggiano over the salad and ham. |
| 5 | Serve immediately. |
