
Apple Salad with Salmon

| Apples, peeled and cored | 2 |
| Scallions, thinly sliced | 1 bunch |
| Watercress, cleaned and trimmed | 1 bunch |
| Fulvi Pecorino Romano, crumbled | 5 oz. |
| Smoked salmon, cut into strips | 3.5 oz. |
| Wine vinegar | 1 tbsp. |
| White wine | 1 tbsp. |
| Sharp mustard | 1 tbsp. |
| Olive oil | 5 tbsp. |
| Salt & pepper | To taste |
| 1 | Cut the apples into quarters and thin slices. |
| 2 | Combine the apples, scallions, watercress, cheese and salmon in a salad bowl. |
| 3 | Whisk the vinegar, wine, salt, pepper and mustard together. Slowly pour in the oil and whisk until emulsified. |
| 4 | Pour the dressing over the salad and toss. Serve. |
