Apple Salad with Salmon
( YIELD: 4 SERVINGS )

I N G R E D I E N T S
Apples, peeled and cored 2
Scallions, thinly sliced 1 bunch
Watercress, cleaned and trimmed 1 bunch
Fulvi Pecorino Romano, crumbled 5 oz.
Smoked salmon, cut into strips 3.5 oz.
Wine vinegar 1 tbsp.
White wine 1 tbsp.
Sharp mustard 1 tbsp.
Olive oil 5 tbsp.
Salt & pepper To taste

1 Cut the apples into quarters and thin slices.
2 Combine the apples, scallions, watercress, cheese and salmon in a salad bowl.
3 Whisk the vinegar, wine, salt, pepper and mustard together. Slowly pour in the oil and whisk until emulsified.
4 Pour the dressing over the salad and toss. Serve.
