Pear, Arugula, & Pecorino Salad
( YIELD: 4 SERVINGS )

I N G R E D I E N T S
Juicy, medium-sized pears 2
Fresh lemon juice 4 tsp.
Olive Oil 2 tsp.
Salt & pepper To taste
Large bunch arugula, trimmed 1
Fulvi Pecorino Romano, shaved 1 cup

1 Core, quarter, and slice the pears lengthwise.
2 In a medium bowl gently toss the pear slices with the lemon juice and olive oil and season with salt and pepper.
3 Make a bed of the arugula on each of 4 salad plates.
4 Arrange pear slices on top, scatter Pecorino shavings over each salad and serve.
