
Pear, Arugula, & Pecorino Salad

| Juicy, medium-sized pears | 2 |
| Fresh lemon juice | 4 tsp. |
| Olive Oil | 2 tsp. |
| Salt & pepper | To taste |
| Large bunch arugula, trimmed | 1 |
| Fulvi Pecorino Romano, shaved | 1 cup |
| 1 | Core, quarter, and slice the pears lengthwise. |
| 2 | In a medium bowl gently toss the pear slices with the lemon juice and olive oil and season with salt and pepper. |
| 3 | Make a bed of the arugula on each of 4 salad plates. |
| 4 | Arrange pear slices on top, scatter Pecorino shavings over each salad and serve. |
