Lamb Chops with Ham & Manchego El Trigal

I N G R E D I E N T S
Lamb chops 6
Thin strips Manchego El Trigal cheese 6
Thin strips Serrano ham or similar 6
White wine 1/2 cup
Oil 2 Tbsp.
Salt and pepper to taste

1 Place oil and seasoned chops in a large pan and brown slowly. When done, place on tray.
2 Place a strip of ham and cheese on each chop and bake at 250° F.
3 In the pan where the chops were browned, drain oil and add white wine. Scrape the sides and bottom well.
4 Add salt and pepper and reduce liquid for a few minutes.
5 Once the cheese has melted on the chops, remove from oven and top with the reduction sauce from pan.
