
Lamb Chops with Ham & Manchego El Trigal

| Lamb chops | 6 |
| Thin strips Manchego El Trigal cheese | 6 |
| Thin strips Serrano ham or similar | 6 |
| White wine | 1/2 cup |
| Oil | 2 Tbsp. |
| Salt and pepper | to taste |
| 1 | Place oil and seasoned chops in a large pan and brown slowly. When done, place on tray. |
| 2 | Place a strip of ham and cheese on each chop and bake at 250° F. |
| 3 | In the pan where the chops were browned, drain oil and add white wine. Scrape the sides and bottom well. |
| 4 | Add salt and pepper and reduce liquid for a few minutes. |
| 5 | Once the cheese has melted on the chops, remove from oven and top with the reduction sauce from pan. |
