Confused About Olive
Oils?
Olive oils possess many of the same
properties that wines do. Olive oils vary from year to
year depending on the climate, region, and the type of
olives used.
Olive
oil comes in three quality grades, and is predominately
produced in Spain, Italy, Greece, Tunisia, Turkey,
Portugal, Morocco, and France. The highest quality olive
oil is called extra virgin,
indicating
that the oil is the first cold-press and that it has a
maximum acidity of 1%. Extra virgin oils have the
strongest flavor of the three different grades and are
the most expensive. The next grade is pure oil,
which is lighter in flavor and higher in acidity. The
lowest quality olive oil is pomace, which is obtained
from the final press of the olive pits and skins. Many
olive oil refiners also empty their filters into the
pomace oil. This grade of oil does not meet up with our
company's quality standards and therefore we do not
carry any brands of pomace oil.
